Aloo Borboti Tarkari



Ingredients:

Potato - 2 -3 medium sized
Karamani/borboti- 250 gm
Onion - 1
Tomato - 1
Cumin/Jeera powder - 1 tsp
Red chillie Powder - 1 tsp
Turmeric - 1/2 tsp
Salt - As required
Oil


Preparation:

Wash, peel and cut potatoes into small cubes.  Dice onions into thin, long pieces.  Wash and cut karamani into 1 inch pieces and set aside.  Cut tomato into small pieces.


Heat oil in a kadai and add onions, potatoes and karamani together. Fry them till the potatoes start turning a bit brown.  Add turmeric and stir for a few minutes.  Then add Jeera powder, red chilli powder, and salt along with the tomatoes and stir them well.


After one or two minutes add a little water and stir well and close with a lid. Reduce the flame so that the veggies don't stick to the bottom.


Keep checking if the veggies are cooked and remove from fire.


This tastes very good with rotis and with rice and dal.
