Tomato Fried Rice




Ingredients:

Rice - 1 cup
Tomatoes - 2 large
Onion - 1 big one
Carrot - 1 carrot (medium sized)
Green Chillies - 3
Red Chilli Powder - 1/2 tsp
Bay Leaf - 2
Ginger - 1/2 inch piece
Garlic - 4 flakes
Garam masala pieces - a few (Cardamom, cinnamon and cloves)
Salt - As required
Oil



Preparation:

Wash and soak rice for 1/2 hour.  Drain the water and fry it in one tsp of ghee in kadai for 2 or 3 minutes. Then add 2 cups water and pressure cook the rice.  Remove from fire and spread it in a broad basin or plate and allow it to cool.

Dice onions and tomatoes into small pieces.  Wash and cut the carrot into thin, half-moon pieces.  Heat oil in kadai and add garam masala pieces. Then add onions and slit green chillies and fry till the onions turn light brown.  Add tomatoes and keep frying till it becomes pulpy.  Add the ginger-garlic paste, chillie powder and carrots and mix all together, close with a lid.  keep the flame low so that it does not stick to the bottom.  Do not add water.  Keep stirring in between.  Once the carrots are soft enough, remove from fire.  Add this to the cooked rice and mix well.
