Bandakopir Tarkari



Ingredients:

Potatoes  - 3 or 4 medium sized
Cabbage  - 1 cup (finely chopped)
Peas  - 1/2 cup
Onion  - 1
Tomatoes  - 1 chopped
Turmeric  - 1/2 tsp
Cumin Powder  - 1/2 tsp
Ginger paste  - 1/2 tsp
Red chillie Powder  - 1/2 tsp (adjust according to taste)
Bay Leaf  - 1
garam masala powder - 1/4 tsp
Salt -  As required
Oil



Preparation:

Peel and cut each potato into 6 to 8 pieces depending on the size, wash and keep aside.  Cut onion into thin, long pieces

Grind ginger into fine paste.  Mix cumin powder (jeera powder), chillie powder, and ginger with some water in a small bowl and keep aside.

Heat oil in a kadai and fry potatoes first.  When they start turning light brownish, remove them and keep aside





In the same oil, add bay leaf and then onions and fry till onions turn light brown and crisp.  Then add turmeric and fry for a few seconds.  Add the ginger paste and spices soaked in water, salt and also the tomatoes and stir fry for a few minutes.  Add cabbage and cook for 3-5 minutes.  Finally put in peas and potatoes and fry for 5 mins and add enough water to cover the veggies and let boil for 10 minutes (or till potatoes are cooked).  Add garam masala powder and mix well and remove from fire.





Tastes good with plain rice, rice & dal, roti, and parata.
