Coconut Rice


Coconut Rice, thengai sadam


Ingredients:

Rice - 1 cup
Coconut - 1 cup grated
Urad dal/black gram dal - 1 tsp
Bengal gram dal - 1 tsp
Red chillies - 3
Green cut chillies - 5 or 6, each cut into half.
Salt - As required
Curry Leaves - few
Oil



Preparation:

Cook rice and allow it to cool.  Heat oil in kadai and add mustard seeds, curry leaves, broken red chillies, green chillies, bengal gram dal, urad dal, and fry for a minute or two till the dal turns light brown.  Add the grated coconut and salt and fry for another minute or two.  Switch off and add to the rice and mix well.  Coconut rice is ready.

** Cashew nuts and coriander leaves can be used to garnish.
